The 2026 MICHELIN Guide's first statewide Florida selection brought the most consequential local restaurant news in years: West Palm Beach's Emelina earned One MICHELIN Star. Chefs Osmel González and Camila Salazar opened the room in February 2026 around a 16-seat chef's counter and a 10-course tasting menu that treats Cuban cooking as a foundation rather than a ceiling, leaning hard on South Florida sourcing and global technique.
Emelina is Palm Beach County's 2026 One-Star headline — the region's only Starred restaurant in this year's guide, and a signal that the local dining identity has crossed a threshold the rest of Florida is already paying attention to. (West Palm Beach previously held a 2025 Star at Konro, which was removed from the guide later that year after the restaurant closed.)
